English historical translation of Molokhovets recipe No. 1745 from the 1901 Russian cookbook, retaining original methods and measures.

Bring two bottles milk to the boil, stir in three quarters glass semolina and cook smooth, without butter; add half a teaspoon salt.

Spread on a deep dish, smooth and cool, then cut into rectangular slices.

Melt an eighth pound butter in a pan, lay in the slices, butter their tops and sprinkle each with sugar.

Brown, turn, sprinkle the other side with sugar and cook until caramelized; transfer to a dish.

Boil two spoonfuls water in the used pan, stirring to loosen the caramel, and pour over the slices.

Historical editorial note: The ingredient list gives half a pound sugar and quarter pound butter.
