No. 174 — Noodles in Milk

Complete English translation of Molokhovets recipe No. 174 from the 1901 Russian cookbook, retaining original quantities, preparation and source.

Bring whole milk to the boil, sprinkle in vermicelli, or preferably homemade noodles No. 245, and cook until tender. Add salt and butter and serve immediately.

To provide

3 historical bottles of milk and ⅓ Russian pound of vermicelli

½ [unit omitted in the printed list] of butter

If using homemade noodles, make them as described in No. 245 with ⅓ Russian pound of flour and one egg. The author declares homemade noodles incomparably tastier than purchased vermicelli.

Historical editorial note: The butter quantity in the printed supply list is incomplete; the translation does not invent a unit.
Original source: Read the Russian recipe No. 174. The quantities and historical terminology of the 1901 book are retained. See the measurements guide; period preparation and storage methods are not modern food-safety instructions.
