No. 1735 — Semolina Dumplings

English historical translation of Molokhovets recipe No. 1735 from the 1901 Russian cookbook, retaining original methods and measures.

Boil three glasses milk with a spoonful butter, stir in one glass semolina and cook until smooth. Add half a teaspoon salt and bake in the oven for fifteen minutes.

Cool and beat in eight yolks; just before serving fold in eight whipped whites.

Five minutes before serving drop into boiling broth, milk or salted water. When they float lift carefully.

Pour butter browned with rusks or grated bread over and serve immediately.

Historical editorial note: The ingredient list gives two glasses milk whereas the method gives three, with eight eggs, one glass semolina and a quarter to three eighths pound butter.
