No. 1698 — Ukrainian Pelmeni with Berries

English historical translation of Molokhovets recipe No. 1698 from the 1901 Russian cookbook, retaining original methods and measures.

Make dough as in No. 1691, substituting buckwheat flour for wheat or mixing equal parts buckwheat and wheat.

Use three glasses fresh bilberries, plums or cherries; remove stones from the stone fruits and toss gently with half a glass sugar without crushing the fruit.

Fill and cook dumplings as in No. 1691.

Serve with very fresh sour cream, sugar and cinnamon. These pelmeni may be served cold or fried in a quarter to half pound butter.
