No. 1660 — Wheat Bliny
English historical translation of Molokhovets recipe No. 1660 from the 1901 Russian cookbook, retaining original methods and measures.
Prepare a starter from four glasses warm milk, two and a half glasses fine wheat flour, three to six zolotnik yeast and a spoonful melted butter.
After rising beat in salt, two yolks with sugar and two to two and a half more glasses flour.
Beat well, add two whipped whites and half a glass of very thick cream, mix gently and let rise.
Fry without disturbing the risen batter.
