No. 1652 — English Pancakes with Lemon and Meringue

English historical translation of Molokhovets recipe No. 1652 from the 1901 Russian cookbook, retaining original methods and measures.

Mix half a glass flour, half a glass yolks, half a glass cream, five eighths glass melted butter, a third glass sugar and zest of one lemon.

Fold in the remaining whipped whites. Fry in small skillets, greasing only at first; do not turn, but brown the tops with the heat of the fire.

Stack on a dish, brushing each layer with lemon juice mixed with a quarter glass table wine and a quarter glass sugar.

Cover the stack with meringue made from four whites and half a glass sugar, bake a few minutes and decorate with jam.

To provide

½ glass flour and 6 eggs

½ glass cream

¾ glass melted butter

Almost 1 glass sugar, about ½ pound

1 lemon

¼ glass table wine

4 whites and optional ¼–½ glass jam

Historical editorial note: The method says ⅝ glass butter whereas the table says ¾ glass.
