No. 1642 — Crêpes Filled with Smolensk-Groat Kasha
English historical translation of Molokhovets recipe No. 1642 from the 1901 Russian cookbook, retaining original methods and measures.
Make one-sided crêpes (cited as No. 136 in the original, evidently the basic crêpes), spread a thin layer of fluffy Smolensk-groat kasha No. 1750 over each, fold like a book, fry and serve immediately.
For the sweet version add currants, cinnamon and sugar to the porridge. These crêpes can also accompany soup or shchi; for that version omit currants, cinnamon and sugar and season only with salt.
To provide
- For crêpes: 3 glasses milk and 2 glasses flour
- 2 eggs, ¼ pound bacon
- ⅜ pound butter, salt and sugar
- For kasha: ½ glass Smolensk groats and 1 egg
- 1 glass milk or water and ¼ glass currants
- 1 spoonful butter, cinnamon and ¼ glass sugar
