No. 1628 — Another Apple Pie
English historical translation of Molokhovets recipe No. 1628 from the 1901 Russian cookbook, retaining original methods and measures.
Arrange one and a half Russian pounds of cooked apples on a dish.
Cream six yolks with half a glass sugar until pale, stir in a spoonful of sifted potato flour and fold in six whipped whites.
Cover the apples with this mixture. The original has no further baking directions.
