No. 1626 — Pie of Grated and Sliced Apples
English historical translation of Molokhovets recipe No. 1626 from the 1901 Russian cookbook, retaining original methods and measures.
Cream six yolks with three spoonfuls of sugar until pale, add seven spoonfuls sour cream, three small grated apples and half a glass flour.
Add one Russian pound finely sliced apples and cinnamon, then fold in six whipped whites.
Transfer to a buttered, breadcrumb-dusted dish and bake.
