No. 1615 — Apple Slices Fried in Batter

English historical translation of Molokhovets recipe No. 1615 from the 1901 Russian cookbook, retaining original methods and measures.

Core, peel and rub one and a half Russian pounds of large apples with lemon; slice and sprinkle with half a small glass of rum and a quarter glass of sugar. Cover, gently turn several times and let stand.

Heat one Russian pound of clarified household frying fat, or equal parts frying fat and clarified butter, in a wide pan; the historic method adds a spoonful of vodka.

Dip slices in batter from Nos. 298–301 and fry until lightly browned. Lift with a slotted spoon onto absorbent paper, turn and dry on fresh paper.

After ten minutes arrange on a dish, dust with half a glass of sugar mixed with sifted cinnamon, and place in the oven for ten to fifteen minutes to form a shiny dry crust.

To provide

¾ glass sugar

½ teaspoon cinnamon

1 small glass rum and ½ lemon

1 pound frying fat or

½ pound frying fat and ½ pound butter
