No. 1607 — Rice with Almond Milk
English historical translation of Molokhovets recipe No. 1607 from the 1901 Russian cookbook, retaining original methods and measures.
Boil about one and a third glasses rice, drain, rinse cold and drain once more.
Mix with sugar and cinnamon, then serve with almond milk No. 492 poured over and raspberry or cherry jam on top.
Optionally add raisins when rice is nearly done and finish cooking them together.
To provide
1½ glasses rice ¼ glass sugar and cinnamon ½–1 glass good raisins | For almond milk: ¾ glass sweet almonds and 5 bitter almonds 3–4 sugar lumps |
Serve raspberry or cherry jam.
Historical editorial note: The source method uses 1⅓ glasses rice but the ingredient table gives 1½. Unprocessed bitter almonds are potentially toxic.
