No. 1603 — Cold Pink Rice
English historical translation of Molokhovets recipe No. 1603 from the 1901 Russian cookbook, retaining original methods and measures.
Pound one and a half glasses rice, mix with a glass of redcurrant or raspberry jam syrup, two and a half glasses water and a quarter to half glass sugar, and cook.
Pour into a mould wetted with cold water and chill. Serve turned out with the same syrup or cold vanilla milk sauce No. 488.
