No. 1599 — Cold Rice with Apples

English historical translation of Molokhovets recipe No. 1599 from the 1901 Russian cookbook, retaining original methods and measures.

Wash a glass of rice in cold water, blanch twice, drain and rinse cold.

Melt a quarter to half a Russian pound butter in a wide pan, add rice and stir.

Peel and core five medium apples, chop and add with half a glass sugar; fry with stirring.

Pour in a glass of water and transfer to the oven. Every ten minutes stir and add more sugar, about another half glass altogether.

When rice is tender and fluffy arrange in a pyramid on a serving platter and, if desired, pour raspberry syrup over.

Alternatively bake the pudding in a buttered, rusk-dusted mould.

To provide

1 glass rice

1½ Russian pounds tart apples

1 glass fine sugar

Optional ½ glass syrup

Historical editorial note: Despite the title 'Cold Rice', the method describes hot cooking and does not explicitly direct cooling before service.
