No. 1548 — Two-Coloured Rice Pudding

English historical translation of Molokhovets recipe No. 1548 from the 1901 Russian cookbook, retaining original methods and measures.

Prepare one and a half glasses rice as in No. 1553. Boil four and a half glasses milk with one and a half spoonfuls butter and cook rice in it until tender.

Divide into two parts. To one add an eighth to a quarter pound grated chocolate, stirred with two spoonfuls hot water and one third glass sugar.

To the other add another third glass sugar and a small glass of saffron infusion.

Layer the two rice mixtures alternately, making about six layers in a buttered, breadcrumb-dusted mould.

Bake for a quarter hour and unmould. Sprinkle with cinnamon sugar and offer chocolate sauce No. 491, rum sauce No. 494 or milk sauce No. 488.

To provide

1½ glasses rice and 4½ glasses milk

1½ spoonfuls butter and ⅔ glass sugar

⅛–¼ Russian pound chocolate
