No. 1542 — Delicious Quick Pie with Semolina, Rice or Rusks

English historical translation of Molokhovets recipe No. 1542 from the 1901 Russian cookbook, retaining original methods and measures.

Cream ten yolks with half a glass fine sugar, add twenty peeled, finely pounded bitter almonds and stir well.

Add either half a glass of raw semolina, a third glass of rice lightly crushed in a mortar or a third glass finely pounded sweet rusks.

Immediately fold in ten whipped whites, transfer to a buttered rusk-dusted pan and bake at once, about half an hour or less.

Add semolina or rusks while folding in the whites so they do not have time to swell.

Serve with sugar, cream, syrup or sauce No. 494. This pie is suitable with tea or coffee.

To provide

10 eggs and ⅓ glass fine sugar

½ glass semolina

Or ⅓ glass rice

Or ⅓ glass crushed rusks

20 bitter almonds

Or lemon zest

½ spoonful butter and 2–3 rusks

Cream, syrup or sauce No. 494

Historical editorial note: The method uses half a glass sugar but the supplies give a third. Raw bitter almonds can contain dangerous cyanogenic compounds.
