No. 1503 — Lemon or Orange Sponge Pudding

English historical translation of Molokhovets recipe No. 1503 from the 1901 Russian cookbook, retaining original methods and measures.

Boil one large lemon or orange in water until a straw passes easily through it, wipe dry and rub through a colander.

Cream half a glass of sugar with seven yolks until pale. Add lemon or orange zest and the sieved fruit.

Fold in seven whipped egg whites, sprinkling in a spoonful of potato flour little by little.

Transfer to a buttered, breadcrumb-dusted mould and steam, or bake briefly in the oven, then turn out onto a serving dish.

Alternatively omit the boiled lemon and use only lemon zest or two or three drops of lemon oil, a teaspoon of lemon salt and a little additional flour.

To provide

1 lemon or orange

7 eggs and ½ glass sugar

⅓ glass potato flour

⅛ Russian pound butter and 2 rusks

Historical editorial note: The historical source gives one spoonful of potato flour in the method but a third of a glass in the supply list.
