No. 1476 — Winter Meatless Vinaigrette
English historical translation of Molokhovets recipe No. 1476 from the 1901 Russian cookbook, retaining original methods and measures.
Combine sliced boiled potatoes, beetroot and turnips with peeled, sliced salted cucumbers, cooked white beans, pickled cauliflower, a few gherkins and chopped greens.
Dress with two spoonfuls olive oil and half a spoonful vinegar; see also the general note.
