Complete English translation of Molokhovets recipe No. 147 from the 1901 Russian cookbook, retaining original quantities, preparation and source.

Prepare and strain stock from 1 Russian pound of potatoes, one onion and a bunch of greens. Complete the soup as described for celery soup No. 72.

To provide

1 Russian pound of potatoes and ¾ pound of basic soup roots

A bunch of greens and 1 onion

3 parsley roots and 3 celery roots

A handful of dried celery greens

½ glass of rice or pearl barley cooked with ½ spoonful of butter

½ lemon and ½–1 glass of sour cream

The potatoes boiled in the soup may also be served in it. In that case use only ¼ glass of pearl barley instead of ½ glass.

Original source: Read the Russian recipe No. 147. The quantities and historical terminology of the 1901 book are retained. See the measurements guide; period preparation and storage methods are not modern food-safety instructions.
