No. 1448 — Salt Beef Aspic

English historical translation of Molokhovets recipe No. 1448 from the 1901 Russian cookbook, retaining original methods and measures.

Soak two Russian pounds of good salt beef in water, rinse and boil. Cool and cut into uniform slices.

Arrange in a decorated mould with herbs, beet slices, hard-boiled egg and similar garnishes.

Pour over aspic left from preparing a calf's head or feet as in Nos. 889–997, adding vinegar or gooseberry juice, clarifying as described in the note and reducing to four glasses.

Serve with mustard sauce. The author praises the economical use of leftover aspic and notes that the salt-beef broth may be used in cabbage soup for servants.

Historical editorial note: Previously cooked salt beef and leftover broth must be kept refrigerated and handled safely; the source's serving suggestions reflect its era.
Original source: Read Russian recipe No. 1448. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
