No. 1384 — Sauerkraut and Fish Pie

English historical translation of Molokhovets recipe No. 1384 from the 1901 Russian cookbook, retaining original methods and measures.

This can be made with dairy butter or vegetable oil for a fasting-day version.

Squeeze three to four glasses of sauerkraut, scald in a sieve and drain.

Fry a minced onion in ⅛ Russian pound butter, add cabbage, black and allspice pepper and stew under a lid until soft, adding rich broth as needed and stirring to prevent burning.

Bone salted salmon, sturgeon or other fish, cut thinly and fry in a spoonful of butter.

Put cabbage on rolled pastry, then fish, more cabbage and a pastry lid. Bake following the general note.

To provide

3 glasses, about 1 Russian pound, of cabbage

¼ Russian pound of butter

or ½ glass of vegetable oil

5 peppercorns and 1 onion

1½ Russian pounds of fish
