No. 1379 — Excellent Sour-Cream Pastry

English historical translation of Molokhovets recipe No. 1379 from the 1901 Russian cookbook, retaining original methods and measures.

Knead two eggs, ¼ Russian pound of butter, ½ pound of sour cream, ½ teaspoon salt and about three glasses (one pound) of flour.

Roll two circles to fit a large deep handleless skillet, making the bottom round larger than the top.

Line a lightly buttered and wiped skillet, add filling, cover with the smaller round and pinch closed.

The author recommends this pastry for a fresh mushroom pie, citing No. 1296 as printed.

Historical editorial note: No. 1296 is not a mushroom-pie recipe in this sequence; the historical reference is retained.
Original source: Read Russian recipe No. 1379. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
