No. 1377 — Yeast Dough Raised in Cold Water

English historical translation of Molokhovets recipe No. 1377 from the 1901 Russian cookbook, retaining original methods and measures.

On the preceding evening mix three zolotnik of dry yeast with warm water and two teaspoons of flour to make half a glass. Leave to rise overnight.

Next morning add one glass of milk, ⅛ Russian pound of melted butter, 1½ Russian pounds of flour, three eggs, one teaspoon sugar and 1½ teaspoons salt.

Beat very thoroughly, the source says for about an hour. Put into a napkin tied loosely enough to allow the dough to double and immerse the bundle in a tub of cold water.

After several hours, when the bundle floats, beat the dough again, shape and fill the pie and allow it to rise on its sheet.

Brush with egg, sprinkle with rusks and bake for half an hour to an hour as in the general note.

To provide

1½–1 Russian pounds of flour

1½ spoonfuls of butter

3 eggs

3 zolotnik of dry yeast

1 glass of milk

1 teaspoon sugar and 1½ teaspoons salt

Historical editorial note: The ingredient table prints an inverted flour range, and the method gives 1½ pounds. Immersing food-filled cloth in water is a historical technique needing modern hygiene assessment.
Original source: Read Russian recipe No. 1377. Historical quantities and terminology are retained. See the measurements guide. Period preparation and storage methods are not modern safety guidance.
