English historical translation of Molokhovets recipe No. 1274 from the 1901 Russian cookbook, retaining original methods and measures.
Split the small fish lengthwise beside the backbone and flatten. Coat in beaten egg and breadcrumbs and fry in butter.
Serve opened flat, with a salad from Section X.
