No. 1108 — Spit-Roast Hazel Grouse Stuffed with Lemon Breadcrumbs
English historical translation of Molokhovets recipe No. 1108 from the 1901 Russian cookbook, retaining original methods and measures.
Clean three or four hazel grouse. Stuff with finely crushed breadcrumbs rubbed with lemon juice and butter, and sew closed.
Wrap each bird in thin slices of pork fat, then buttered paper; tie and roast on a spit, basting with butter.
The source suggests pouring the leftover fat into a glazed earthenware pot for the household servants to use with kasha or potatoes.
